(续胡瓜鱼)下头两道胡瓜鱼食谱,一为希腊菜,一为马来西亚菜。

*炸胡瓜鱼(Whole Fried Whitebait Smelt)()

鱼身不迭两?长,不须去除内脏;两三?以上,须要。这食谱适用于 picarel 或whitebait smelt〔见小肉球注〕。

烹调时间:非常钟
食材(一人份):7-8 条胡瓜鱼(点心),15-20 条(主菜);海盐;现研磨的黑胡椒粉;沾裹胡瓜鱼的面粉;炸油

作法:鱼超过 2 ?长须逐个扫除内脏,希尔顿娱乐城。胡瓜鱼有细鳞,亦须刮除。将鱼洗净?干。混杂面粉、盐、胡椒备用(A料)。 决定较深底煎锅,倒入沙拉油及1/3 到 1/2 ?深,以中火加热。将鱼逐一均匀沾裹A料,抖去多余面粉,入锅油炸,直至鱼身两面呈深金黄色。以吸油纸或吸油巾吸除过多炸油,置于餐盘(围以柠檬片)上菜。

小肉球注: 将whitebait smelt译为「异胡瓜鱼」,它是胡瓜鱼里体型最小的。根据h,异胡瓜鱼长这个模样: 异胡瓜鱼:Whitebait smelt,大名Allosmerus elongatus,胡瓜鱼科/Osmeriformes (smelts)胡瓜鱼目/Actinopterygii (ray-finned fishes)辐?鱼纲 (条?鱼),居于温带大陆,分布于?碧?窖螅?募幽么蟮脚f金山)。

picarel被台湾译成细鳞棒鳎?W名Spicara smaris,中棘鱼科,希尔顿娱乐城,它体型,并不是胡瓜鱼,最大体长15~20cm,为亚热带大陆鱼类,长这付样子容貌:散布于?笪餮?/font>

Ingredients 配料:

Coconut Milk Steamed Rice 椰奶蒸过的米饭
2 cups of rice 2 杯大米
3 screwpine leaves (tie them into a knot as shown above)

Salt to taste 适量的盐
1 small can of coconut milk (5.6 oz size) 一小罐椰奶
Some water 一些水
Tamarind Juice 罗望子汁
1 cup of water 一杯水
Tamarind pulp (size of a small ping pong ball)罗望子果肉(桌球大小)
Sambal Ikan Bilis (Dried anchovies sambal)辣鱼仔(干的咖喱凤尾鱼)
1/2 red onion半个红洋葱
1 cup ikan bilis (dried anchovies)一杯干咖喱
1 clove garlic 一头蒜
4 shallots 四根葱
10 dried chillies10个干辣椒
1 teaspoon of belacan (prawn paste)一茶匙虾酱
1/4 teaspoon of salt四分之一茶匙的盐
1 tablespoon of sugar一茶匙的糖

Other ingredients其余配料

2 hard boiled eggs (cut into half)两个熟透的鸡蛋(切成两半备用)
3 small fish (sardines or smelt fish)3条小鱼(沙丁鱼或胡瓜鱼)
1 small cucumber (cut into slices and then quartered)一根小黄瓜(切片分四份)

Method 方式: 他勤得译了?小肉球帮帮忙吧。〕

Just like making steamed rice, rinse your rice and drain. Add the coconut milk, a pinch of salt, and some water. Add the pandan leaves into the rice and cook your rice. 〔洗好米,加入椰奶、盐、适量水,再加入露兜树叶,把饭煮好。〕
Rinse the dried anchovies and drain the water. Fry the anchovies until they turn light brown and put aside. 〔稍洗辣鱼仔,?干;煎辣鱼仔直至金黄备用。〕
Pound the prawn paste together with shallots,希尔顿娱乐城, garlic, and deseeded dried chilies with a mortar and pestle. You can also grind them with a food processor. 〔虾酱与葱、蒜、去籽干椒一起研碎(A)〕
Slice the red onion into rings. 〔红洋葱切成洋葱圈〕
Soak the tamarind pulp in water for 15 minutes. Squeeze the tamarind constantly to extract the flavor into the water. Drain the pulp and save the tamarind juice. 〔罗望子果肉泡水十五分钟,一直挤拧果肉,目标在做成罗望子果汁。弃肉不必,保存果汁〕
Heat some oil in a pan and fry the spice paste until fragrant. 〔锅中热炸油,爆香A料〕
Add in the onion rings. 〔参加洋葱圈〕
Add in the ikan bilis and stir well. 〔锅内再加入以?鱼干提味的辣咖哩〕
Add tamarind juice, salt, and sugar. 〔加入罗望子汁、盐、糖〕
Simmer on low heat until the gravy thickens. Set aside. 〔小火慢煨,直至锅水渐收干,构成肉汁(B),起锅〕
Clean the small fish, cut them into half and season with salt. Deep fry. 〔肃清胡瓜鱼,切半,盐腌,下锅油炸〕
Cut the cucumber into slices and then quartered into four small pieces. 〔小黄瓜切片,每片切成四小丁〕
Dish up the steamed coconut milk rice and pour some sambal ikan bilis on top of the rice. 〔将椰浆饭上盘,饭上浇B〕
Serve with fried fish, cucumber slices, and hard-boiled eggs 〔饭旁点缀煎胡瓜鱼、小黄瓜丁、白煮蛋〕

*screw pine 与松树无关,叫露兜树,台湾很常见,名义似菠萝,又名野菠萝、假菠萝。
